Beat the Heat with 3 Tasty Recipes

July is in full swing and the heat has arrived! For the next couple of weeks finding ways to stay cool will be a top priority. For me that means getting outside in the early morning before the heat strikes and then staying indoors during the peak heat of the day.
And if you're like me you may not feel like eating when it's super hot out. But indulging in refreshing, delicious dishes that not only taste great but also help you stay hydrated and energized makes meal planning a bit easier in the heat. Here are three easy-to-make recipes that will keep you cool and satisfied all summer long.
1. Watermelon and Cucumber Salad
Ingredients:
4 cups watermelon, cubed
2 cups cucumber, sliced
1/4 cup fresh mint leaves, chopped
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon lime juice
Salt and pepper to taste
Instructions:
In a large bowl, combine the watermelon and cucumber.
Add the chopped mint leaves and feta cheese.
Drizzle with olive oil and lime juice.
Toss everything gently to combine.
Season with salt and pepper to taste.
Serve chilled.

1 tablespoon chia seeds
Ice cubes (optional)
Instructions:
Add all ingredients to a blender.
Blend until smooth and creamy.
Add ice cubes if desired and blend again.
Pour into a glass and enjoy immediately.

3. Berry Yogurt Popsicles
Ingredients:
2 cups Greek yogurt
1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Popsicle molds and sticks
Instructions:
In a bowl, mix the Greek yogurt, honey or maple syrup, and vanilla extract.
Layer the yogurt mixture and mixed berries into popsicle molds, alternating between the two.
Insert popsicle sticks into the molds.
Freeze for at least 4 hours or until fully set.
To remove the popsicles, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.
